It was a great win but Coventry's side was a first XI side packed with experience.
Palace's side minus Guehi, Wharton, and Pino was full of fringe players and youngsters. They still should have been goof enough, of course, but my opinion is that Sutton's win was better.
I would add that non-league football today is far more professional (if that's the right word!!) than it was 30 + years ago.

Yes, a time when the top sides used to play their best XI, unlike nowadays, which is why the FA Cup is a shadow of what it used to be.
I would say that the top 5 would be in this order:
Sutton v Coventry
Hereford v Newcastle.
Birmingham v Altrincham
Wrexham v Arsenal
Macclesfield v Palace
